The juniper berries used in cooking are simply berries from juniper bushes. The first year the juniper blooms and it is the white flowers that then develop into berries. In the second year, green berries are formed, which after another year turn dark blue-purple, and it is only then that they are picked and dried to be used as a spice.


Juniper has a characteristic taste that brings to mind forest and game. They go particularly well in cheesy stews, sauces, marinades and with venison. They are also used for the German sauerkraut and as a spice for brandy. It is, for example, juniper berries that give Gin its special taste.
