Dill is an annual plant that grows to about 70 cm - 1 m high. The flowers, dill crowns, are large, yellow and clustered. With its very characteristic taste, dill has its rightful place in Swedish summer food, and we in Scandinavia are said to be the most diligent users of dill in the world. Both the dill leaves and the dill seeds are used as a spice. The flavor is enhanced during cooking.


The dill leaves are harvested until flowering, after which they deteriorate. They can be frozen, used fresh or dried. The leaves are less bitter and milder in taste than the seeds. The seeds are harvested when the flower heads start to turn brown.


Dill goes well with dill stewed potatoes, boiled new potatoes, crayfish, herring, fish gratin and dill meat.
