This coffee from North Sumatra in Indonesia is grown by many small farmers in the hilly landscape called Aceh Highlands. Indonesia is known for its humid climate, wide biodiversity and many micro-climates.
The coffee grows at an altitude of 1300 meters and develops a clear body with sweet elements. This is largely due to the unique way coffee is handled after harvest called "Gilih Basah" and is unique to Indonesia. Since the humidity is too high to dry coffee beans normally, this method has been developed which means that the berries retain parts of their skin for a longer time before export. This results in more sugars affecting the bean and giving it a complex and developed character.
