Fennel is a bunch-flowering perennial that can grow up to 2 meters tall. It has long thin leaves and yellow flowers and looks a lot like dill. The fruit contains anitol, an anise-scented volatile oil. Fennel is both a spice and a vegetable. As a spice, the fruits are mainly used, but also the leaves, either fresh or dried. The taste is mild and very reminiscent of aniseed. The vegetable fennel is about the size of a fist and this "tuber" can be eaten fresh in salads, boiled, au gratin or prepared in other ways.
Fennel offers a nice burst of flavor with a licorice character in bread, fish and vegetable dishes, soups and stews.
